Instructions

  1. Start by thoroughly washing and drying the apples. Firmly insert a wooden stick into the top of each apple, ensuring it goes in halfway for stability.
  2. In a saucepan, mix together the sugar, corn syrup, and water. Heat the mixture over medium heat, stirring until the sugar is fully dissolved.
  3. Once dissolved, stop stirring and allow the mixture to boil.
  4. Monitor the temperature closely until it reaches 300°F, which is the hard crack stage, taking about 10-15 minutes.
  5. Once at the desired temperature, remove the saucepan from the heat and carefully mix in the food dye (if desired), vanilla essence, and sea salt.
  6. Quickly dip each apple into the hot syrup, ensuring they are fully coated. Allow any excess syrup to drip off before placing the apples on the prepared parchment or silicone mat.
  7. Let the coated apples sit at room temperature for approximately 30 minutes, or until the candy shell has hardened completely.
