Description
A delicious and creamy dish made with spiralized zucchini noodles, cherry tomatoes, and Parmesan cheese.
Ingredients
Scale
- 2 medium zucchini, spiralized into noodles
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup cherry tomatoes, halved
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
- Add the cherry tomatoes to the skillet and cook for 3-4 minutes, until they start to soften.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and the sauce is smooth.
- Season with salt and pepper to taste.
- Add the spiralized zucchini noodles to the skillet, tossing them in the sauce for about 2-3 minutes until they are heated through but still slightly crunchy.
- Remove from heat and garnish with fresh basil leaves before serving.
Notes
- For added protein, consider mixing in cooked chicken or shrimp.
- If you prefer a thicker sauce, let the cream simmer a bit longer before adding the zucchini noodles.
- Serve with pork rinds, celery sticks, or cucumber slices for a crunchy side option.
