Description
Briam is a traditional Greek dish made with a variety of vegetables, baked to perfection with olive oil and herbs.
Ingredients

- 2 medium potatoes, sliced
- 2 medium zucchinis, sliced
- 1 large eggplant, sliced
- 1 bell pepper, sliced
- 1 onion, sliced
- 4 ripe tomatoes, chopped
- 1/2 cup olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon dried oregano
Instructions
- Preheat the oven to 180°C (350°F).
- In a large baking dish, layer the sliced potatoes, zucchinis, eggplant, bell pepper, and onion.
- In a bowl, mix the chopped tomatoes, minced garlic, olive oil, salt, pepper, and oregano.
- Pour the tomato mixture over the layered vegetables.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the vegetables are tender and slightly caramelized.
Notes
- For a richer flavor, add feta cheese on top before serving.
- This dish can be served warm or at room temperature.
- Leftovers can be stored in the refrigerator for up to 3 days.
