Description

Briam is a traditional Greek dish made with a variety of vegetables, baked to perfection with olive oil and herbs.


Ingredients

  • 2 medium potatoes, sliced
  • 2 medium zucchinis, sliced
  • 1 large eggplant, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 4 ripe tomatoes, chopped
  • 1/2 cup olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large baking dish, layer the sliced potatoes, zucchinis, eggplant, bell pepper, and onion.
  3. In a bowl, mix the chopped tomatoes, minced garlic, olive oil, salt, pepper, and oregano.
  4. Pour the tomato mixture over the layered vegetables.
  5. Cover the dish with aluminum foil and bake for 45 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes until the vegetables are tender and slightly caramelized.

Notes

  • For a richer flavor, add feta cheese on top before serving.
  • This dish can be served warm or at room temperature.
  • Leftovers can be stored in the refrigerator for up to 3 days.
