  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 4 large eggs
  • 2 cups cauliflower rice
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the crumbled breakfast sausage and diced bacon, cooking until browned and cooked through, about 5-7 minutes.
  2. Add the diced onion, green bell pepper, and celery to the skillet. Sauté for 5 minutes until the vegetables are softened.
  3. Stir in the minced garlic, smoked paprika, dried thyme, and cayenne pepper. Cook for an additional 1-2 minutes until fragrant.
  4. Pour in the chicken broth and bring the mixture to a simmer. Add the cauliflower rice and cook for 5-7 minutes until the cauliflower is tender.
  5. Create four small wells in the mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.
  6. Season with salt and pepper to taste. Garnish with chopped green onions before serving.
