- 1/2 pound breakfast sausage, crumbled
- 1/2 pound diced bacon
- 1 small onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced

- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 4 large eggs
- 2 cups cauliflower rice
- 2 cups chicken broth
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the crumbled breakfast sausage and diced bacon, cooking until browned and cooked through, about 5-7 minutes.
- Add the diced onion, green bell pepper, and celery to the skillet. Sauté for 5 minutes until the vegetables are softened.
- Stir in the minced garlic, smoked paprika, dried thyme, and cayenne pepper. Cook for an additional 1-2 minutes until fragrant.
- Pour in the chicken broth and bring the mixture to a simmer. Add the cauliflower rice and cook for 5-7 minutes until the cauliflower is tender.
- Create four small wells in the mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.
- Season with salt and pepper to taste. Garnish with chopped green onions before serving.
Notes
- For added flavor, consider adding a splash of hot sauce or Worcestershire sauce to the gumbo before serving.
- Substitute the breakfast sausage with diced chicken or shrimp for a different protein option.
