A delicious recipe for rustic bread topped with Huevo de Toro tomatoes and drizzled with Andalusian olive oil.

- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 1/4 cups warm water (about 110°F)
- 1 tablespoon olive oil
- 2 large Huevo de Toro tomatoes, sliced
- 1/4 cup Andalusian olive oil
- Fresh basil leaves, for garnish
- Sea salt, for sprinkling
Instructions
- In a large mixing bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy.
- Add the all-purpose flour and salt to the yeast mixture. Stir until a dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
- Preheat your oven to 450°F.
- Punch down the risen dough and shape it into a round loaf. Place it on a baking sheet lined with parchment paper.
- Let the shaped dough rise for another 30 minutes while the oven preheats.
- Bake the bread for 25-30 minutes or until golden brown and sounds hollow when tapped on the bottom.
- Remove the bread from the oven and let it cool on a wire rack.
- Once cooled, slice the bread and arrange the Huevo de Toro tomato slices on top. Drizzle generously with Andalusian olive oil and sprinkle with sea salt. Garnish with fresh basil leaves before serving.
Notes
- For added flavor, mix in some chopped garlic or herbs like rosemary or thyme into the dough before baking.
- Serve with a side of balsamic vinegar for dipping or drizzling over the tomatoes for an extra layer of taste.
