Instructions

  1. In a large saucepan, warm the olive oil over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until it becomes soft and translucent.
  3. Incorporate the garlic and bell pepper, cooking for an additional 3 minutes until fragrant.
  4. Introduce the soaked black beans, cumin, smoked paprika, oregano, cayenne pepper, vegetable broth, diced tomatoes, and bay leaf into the pot.
  5. Bring the mixture to a vigorous boil, then lower the heat to a gentle simmer.
  6. Cover and let it cook for 1 to 1.5 hours, stirring occasionally, until the beans are tender.
  7. If the stew thickens too much, add more broth or water as needed.
  8. Once the beans are cooked, adjust the seasoning with salt and pepper.
  9. Discard the bay leaf before serving.
  10. Meanwhile, in a separate skillet, toast the cassava flour over medium heat, stirring constantly for 5-7 minutes until it reaches a light golden hue and emits a nutty fragrance.
  11. Remove from heat and set aside.
