- 2 whole rabbits, cut into pieces (about 3–4 pounds total)
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 cup dry white wine
- 2 tablespoons fresh rosemary, chopped (or 2 teaspoons dried)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 1 tablespoon lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat. Add the rabbit pieces and brown them on all sides, about 5-7 minutes. Remove the rabbit and set aside.
- In the same pot, add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and white wine, scraping the bottom of the pot to release any browned bits. Bring to a simmer.
- Return the rabbit pieces to the pot. Add the rosemary, salt, black pepper, bay leaf, and lemon juice. Stir to combine.
- Cover the pot and reduce the heat to low. Let it braise for about 1.5 to 2 hours, or until the rabbit is tender and easily pulls apart with a fork.
- Once cooked, remove the rabbit pieces from the pot and let them rest for a few minutes. Discard the bay leaf.
- If desired, increase the heat and reduce the sauce for a thicker consistency. Serve the rabbit garnished with fresh parsley.
Notes
- For a richer flavor, add a tablespoon of tomato paste to the pot during step 3.
- Serve with crusty bread or over a bed of creamy polenta to soak up the delicious sauce.
