- 2 pounds beef cheeks, trimmed
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 1 tablespoon tomato paste
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 300°F (150°C).
- In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef cheeks with salt and pepper, then sear them in the hot oil until browned on all sides, about 3-4 minutes per side. Remove the beef cheeks and set aside.
- In the same pot, add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute.
- Stir in the tomato paste, then pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for 2-3 minutes.
- Return the beef cheeks to the pot and add the beef broth, thyme, rosemary, and bay leaf. Bring to a gentle simmer.
- Cover the pot with a lid and transfer it to the preheated oven. Braise for 3-4 hours, or until the beef cheeks are fork-tender.
- Once done, remove the pot from the oven and let it rest for 10 minutes. Discard the bay leaf before serving.
- Serve the beef cheeks with the braising liquid spooned over the top, garnished with fresh parsley.

- For a richer flavor, add a tablespoon of Worcestershire sauce to the braising liquid.
