  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef cheeks with salt and pepper, then sear them in the hot oil until browned on all sides, about 3-4 minutes per side. Remove the beef cheeks and set aside.
  3. In the same pot, add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute.
  4. Stir in the tomato paste, then pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for 2-3 minutes.
  5. Return the beef cheeks to the pot and add the beef broth, thyme, rosemary, and bay leaf. Bring to a gentle simmer.
  6. Cover the pot with a lid and transfer it to the preheated oven. Braise for 3-4 hours, or until the beef cheeks are fork-tender.
  7. Once done, remove the pot from the oven and let it rest for 10 minutes. Discard the bay leaf before serving.
  8. Serve the beef cheeks with the braising liquid spooned over the top, garnished with fresh parsley.
