A delicious Bourbon Peach Upside Down Cake that combines the sweetness of peaches with the rich flavor of bourbon.

- 3 tablespoons butter
- ½ cup brown sugar
- 1 tablespoon bourbon
- 2 fresh peaches, thinly sliced
- ½ cup butter, softened
- ¾ cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup milk
Instructions
- Preheat oven to 350°F (175°C). Grease a round 9-inch cake pan.
- In the pan, melt butter, then stir in brown sugar and bourbon. Arrange peach slices on top.
- In a bowl, cream butter and sugar. Add eggs and vanilla.
- In a separate bowl, whisk flour, baking powder, and salt. Alternate adding dry mixture and milk to wet mixture.
- Pour batter over peaches.
- Bake for 35–40 minutes or until toothpick comes out clean.
- Cool 10 minutes, then invert onto plate. Serve warm.
