Description

A refreshing no-bake dessert combining the flavors of blueberry, lime, and coconut.


Ingredients

  • 1 ½ cups crushed digestive biscuits
  • ½ cup desiccated coconut
  • ½ cup melted unsalted butter
  • 1 cup softened cream cheese
  • ½ cup icing sugar
  • 1 teaspoon vanilla essence
  • 1 tablespoon freshly squeezed lime juice
  • Zest of 1 lime
  • 1 cup ripe blueberries
  • ½ cup coconut milk

Instructions

  1. Mix the crushed digestive biscuits and desiccated coconut in a large bowl.
  2. Stir in the melted butter until well combined.
  3. Press the mixture firmly into the base of a 9×9-inch square baking dish to create a crust.
  4. In another bowl, whip the softened cream cheese until creamy and smooth using an electric mixer.
  5. Gradually incorporate the icing sugar, vanilla essence, lime juice, and lime zest, mixing until fluffy.
  6. Carefully fold in the blueberries, ensuring they remain intact.
  7. Spread the cream cheese mixture evenly over the crust in the baking dish.
  8. Drizzle the coconut milk on top and smooth it out with a spatula.
  9. Cover the dish with plastic wrap and refrigerate for a minimum of 4 hours to set.
  10. Once chilled and firm, slice into squares and enjoy.

Notes

  • For a chocolate variation, mix in ¼ cup of cocoa powder into the cream cheese blend.
  • For a more exotic taste, swap out the blueberries for diced mango or pineapple.
