- 1 teaspoon vanilla essence
- 1 tablespoon freshly squeezed lime juice
- Zest of 1 lime
- 1 cup ripe blueberries
- ½ cup coconut milk
Instructions
- Mix the crushed digestive biscuits and desiccated coconut in a large bowl.
- Stir in the melted butter until well combined.
- Press the mixture firmly into the base of a 9×9-inch square baking dish to create a crust.
- In another bowl, whip the softened cream cheese until creamy and smooth using an electric mixer.
- Gradually incorporate the icing sugar, vanilla essence, lime juice, and lime zest, mixing until fluffy.
- Carefully fold in the blueberries, ensuring they remain intact.
- Spread the cream cheese mixture evenly over the crust in the baking dish.
- Drizzle the coconut milk on top and smooth it out with a spatula.
- Cover the dish with plastic wrap and refrigerate for a minimum of 4 hours to set.
- Once chilled and firm, slice into squares and enjoy.
Notes
- For a chocolate variation, mix in ¼ cup of cocoa powder into the cream cheese blend.
- For a more exotic taste, swap out the blueberries for diced mango or pineapple.
