- 4 boneless, skinless chicken breasts
- 1 cup fresh blueberries
- 4 oz goat cheese, softened
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh thyme for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the goat cheese and blueberries until well combined.
- Cut a pocket in each chicken breast and stuff with the blueberry and goat cheese mixture.
- Season the chicken with garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a skillet over medium heat and sear the chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
- Let the chicken rest for a few minutes before serving. Garnish with fresh thyme if desired.

- For added flavor, marinate the chicken in lemon juice and herbs before stuffing.
- Serve with a side of roasted vegetables or a fresh salad.
