Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 4 oz goat cheese, softened
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the goat cheese and blueberries until well combined.
  3. Cut a pocket in each chicken breast and stuff with the blueberry and goat cheese mixture.
  4. Season the chicken with garlic powder, onion powder, salt, and pepper.
  5. Heat olive oil in a skillet over medium heat and sear the chicken breasts for 3-4 minutes on each side until golden brown.
  6. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
  7. Let the chicken rest for a few minutes before serving. Garnish with fresh thyme if desired.
