Ingredients

  • ½ cup unsweetened cocoa powder
  • ½ cup powdered sugar
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 large egg yolk
  • 2 tablespoons cold water
  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate, chopped
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine the flour, cocoa powder, powdered sugar, and salt.
  3. Add the softened butter and mix until crumbly.
  4. Stir in the egg yolk and cold water until the dough forms.
  5. Press the dough into a 9-inch tart pan evenly across the bottom and up the sides.
  6. Prick the bottom with a fork and bake for 15-20 minutes or until set.
  7. Let cool completely.
  8. In a saucepan over medium heat, bring the heavy cream to a simmer.
  9. Remove from heat and add the chopped chocolate, stirring until smooth.
  10. Stir in the vanilla extract.
  11. Pour the ganache into the cooled tart shell and refrigerate for at least 2 hours until set.
  12. In a small bowl, combine the blueberries, granulated sugar, and lemon juice. Let sit for 10 minutes to macerate.
  13. Once the ganache is set, top the tart with the blueberry mixture before serving.

Notes

  • For a richer flavor, try using dark chocolate instead of semi-sweet chocolate.
