A rich and creamy blueberry crumble cheesecake with a delicious graham cracker crust and a crunchy topping.
Ingredients

- 1 ½ cups graham cracker crumbs
- ⅓ cup melted butter
- 1 tbsp sugar
- 16 oz cream cheese, softened
- ½ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup fresh blueberries
- ½ cup flour
- ¼ cup brown sugar
- ¼ cup cold butter, cubed
- ½ tsp cinnamon
Instructions
- Preheat oven to 325°F (160°C). Mix crust ingredients and press into a 9-inch springform pan.
- Beat cream cheese, sugar, eggs, and vanilla until smooth. Fold in blueberries. Pour over crust.
- For crumble, mix flour, brown sugar, and cinnamon. Cut in butter until crumbly. Sprinkle over filling.
- Bake for 45-50 minutes. Cool completely before refrigerating for 4 hours.
