  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 cup fresh blueberries
  • 1 teaspoon lemon zest
  • 1/2 teaspoon cinnamon
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon lemon juice (for glaze)

Instructions

  1. In a large mixing bowl, combine the flour, granulated sugar, and salt.
  2. In a separate bowl, mix the warm milk and yeast, letting it sit for about 5 minutes until foamy.
  3. Add the melted butter, egg, and vanilla extract to the yeast mixture and stir to combine.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  5. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  7. While the dough is rising, prepare the filling by mixing the softened cream cheese, powdered sugar, blueberries, lemon zest, and cinnamon in a bowl until well combined.
  8. Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle about 1/4 inch thick.
  9. Spread the cream cheese filling evenly over the dough, leaving a small border around the edges.
  10. Roll the dough tightly into a log, then cut the log in half lengthwise to expose the filling.
  11. Twist the two halves together and place them into a greased loaf pan.
  12. Cover and let rise for another 30 minutes.
  13. Preheat the oven to 350°F.
  14. Bake the babka for 30-35 minutes or until golden brown and a toothpick inserted comes out clean.
  15. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
  16. For the glaze, mix powdered sugar and lemon juice until smooth and drizzle over the cooled babka before slicing.
