A delicious recipe for Blueberry Cream Cheese Babka, perfect for breakfast or dessert.

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/2 cup whole milk, warmed to 110°F
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1 cup fresh blueberries
- 1 teaspoon lemon zest
- 1/2 teaspoon cinnamon
- 1/4 cup powdered sugar (for glaze)
- 1 tablespoon lemon juice (for glaze)
Instructions
- In a large mixing bowl, combine the flour, granulated sugar, and salt.
- In a separate bowl, mix the warm milk and yeast, letting it sit for about 5 minutes until foamy.
- Add the melted butter, egg, and vanilla extract to the yeast mixture and stir to combine.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- While the dough is rising, prepare the filling by mixing the softened cream cheese, powdered sugar, blueberries, lemon zest, and cinnamon in a bowl until well combined.
- Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle about 1/4 inch thick.
- Spread the cream cheese filling evenly over the dough, leaving a small border around the edges.
- Roll the dough tightly into a log, then cut the log in half lengthwise to expose the filling.
- Twist the two halves together and place them into a greased loaf pan.
- Cover and let rise for another 30 minutes.
- Preheat the oven to 350°F.
- Bake the babka for 30-35 minutes or until golden brown and a toothpick inserted comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
- For the glaze, mix powdered sugar and lemon juice until smooth and drizzle over the cooled babka before slicing.
Notes
- For a richer flavor, try adding a teaspoon of almond extract to the filling.
- You can substitute the blueberries with raspberries or chopped strawberries for a different fruit twist.
