Ingredients

  • 1 cup unsweetened coconut flakes
  • 1/2 cup ground almonds
  • 1/4 cup agave syrup or honey
  • 1/4 cup melted coconut butter
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon spirulina powder
  • 1/4 teaspoon Himalayan salt
  • 1 cup semi-sweet chocolate chips (dairy-free if preferred)
  • 1 tablespoon coconut butter (for chocolate coating)

Instructions

  1. In a mixing bowl, blend together the coconut flakes, ground almonds, agave syrup (or honey), melted coconut butter, vanilla extract, spirulina powder, and Himalayan salt until the mixture is well combined and sticky.
  2. Prepare a square baking pan (8×8 inches) by lining it with parchment paper, allowing some paper to hang over the edges for easy lifting later. Firmly press the coconut mixture into the bottom of the pan, leveling it out with a spatula or your hands.
  3. Chill the pressed mixture in the refrigerator for about 30 minutes to help it solidify.
  4. While the base is cooling, melt the semi-sweet chocolate chips with 1 tablespoon of coconut butter in a microwave-safe bowl. Heat in short bursts of 30 seconds, stirring until the chocolate is smooth and fully melted.
  5. After the coconut base has set, take it out of the fridge and slice it into bars or squares. Dip each piece into the melted chocolate, ensuring they are thoroughly coated. Place the chocolate-covered bars back onto the parchment-lined pan.
  6. Once all the bars are coated in chocolate, return them to the refrigerator for another 30 minutes to let the chocolate harden completely.
  7. Serve your Coconut Bliss Bars chilled or at room temperature for a delightful treat.

Notes

  • For an extra crunch, consider adding in some chopped walnuts or pumpkin seeds to the coconut mixture before pressing it into the pan.
