  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a small bowl, mix together the paprika, cayenne pepper, garlic powder, onion powder, oregano, salt, and black pepper.
  2. Rub the spice mixture all over the mahi-mahi fillets.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Add the mahi-mahi fillets to the skillet and cook for about 4-5 minutes on each side, or until cooked through and blackened.
  5. Remove the mahi-mahi from the skillet and let it rest for a few minutes before flaking it into bite-sized pieces.
  6. Warm the corn tortillas in a separate skillet or microwave.
  7. Assemble the tacos by placing the flaked mahi-mahi on the tortillas, then topping with shredded cabbage, diced tomatoes, and chopped cilantro.
  8. Serve with lime wedges on the side.
