Description
A refreshing and flavorful sorbet made with fresh blackberries and infused with thyme.
Ingredients

- 2 cups fresh blackberries
- 1 cup granulated sugar
- 1 cup water
- 1 tablespoon fresh thyme leaves, chopped
- 1 tablespoon lemon juice
- Pinch of salt
Instructions
- In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and let cool slightly.
- Add the chopped thyme leaves to the sugar syrup and let steep for about 15 minutes to infuse the flavor.
- Strain the syrup through a fine-mesh sieve into a bowl to remove the thyme leaves.
- In a blender or food processor, puree the blackberries until smooth. Strain the blackberry puree through a fine-mesh sieve to remove the seeds.
- In a large bowl, combine the blackberry puree, thyme-infused syrup, lemon juice, and a pinch of salt. Mix well.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Transfer the sorbet to an airtight container and freeze for at least 4 hours or until firm.
Notes
- For a creamier texture, consider adding 1 tablespoon of vodka to the mixture before churning.
- For a different flavor twist, try substituting basil for thyme or adding a splash of orange juice for a citrusy kick.
