Description

A refreshing and flavorful sorbet made with fresh blackberries and infused with thyme.


Ingredients

  • 2 cups fresh blackberries
  • 1 cup granulated sugar
  • 1 cup water
  • 1 tablespoon fresh thyme leaves, chopped
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and let cool slightly.
  2. Add the chopped thyme leaves to the sugar syrup and let steep for about 15 minutes to infuse the flavor.
  3. Strain the syrup through a fine-mesh sieve into a bowl to remove the thyme leaves.
  4. In a blender or food processor, puree the blackberries until smooth. Strain the blackberry puree through a fine-mesh sieve to remove the seeds.
  5. In a large bowl, combine the blackberry puree, thyme-infused syrup, lemon juice, and a pinch of salt. Mix well.
  6. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  7. Transfer the sorbet to an airtight container and freeze for at least 4 hours or until firm.

Notes

  • For a creamier texture, consider adding 1 tablespoon of vodka to the mixture before churning.
  • For a different flavor twist, try substituting basil for thyme or adding a splash of orange juice for a citrusy kick.
