A creamy and delicious Blackberry Mousse Cake with a chocolate cookie crust, topped with a luscious blackberry topping.

- 2 cups fresh blackberries
- 1 1/2 cups heavy whipping cream
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 packet of gelatin (unflavored)
- 1/4 cup water
- 1 cup chocolate cookie crumbs
- 1/4 cup melted butter
- 1/2 cup blackberry jam
- 1 tbsp lemon juice
- Fresh blackberries for garnish
Instructions
- Combine the chocolate cookie crumbs and melted butter. Press into the bottom of a springform pan. Chill in the fridge while you prepare the mousse.
- Sprinkle the gelatin over water in a small bowl, let it sit for 5 minutes to bloom, then dissolve it over low heat.
- Blend fresh blackberries until smooth, then strain to remove seeds. In a mixing bowl, beat the cream with sugar and vanilla until soft peaks form. Fold in the blackberry puree and dissolved gelatin.
- Pour the mousse over the crust and smooth the top. Chill for at least 4 hours or overnight until firm.
- Mix blackberry jam and lemon juice for the topping. Spread over the set mousse and garnish with fresh blackberries.
Notes
- Ensure the gelatin is fully dissolved to avoid lumps in the mousse.
- Chill the cake overnight for best results.
- Use fresh, ripe blackberries for optimal flavor.
