Ingredients

  • 2 cups fresh blackberries
  • 1 1/2 cups heavy whipping cream
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 packet of gelatin (unflavored)
  • 1/4 cup water
  • 1 cup chocolate cookie crumbs
  • 1/4 cup melted butter
  • 1/2 cup blackberry jam
  • 1 tbsp lemon juice
  • Fresh blackberries for garnish

Instructions

  1. Combine the chocolate cookie crumbs and melted butter. Press into the bottom of a springform pan. Chill in the fridge while you prepare the mousse.
  2. Sprinkle the gelatin over water in a small bowl, let it sit for 5 minutes to bloom, then dissolve it over low heat.
  3. Blend fresh blackberries until smooth, then strain to remove seeds. In a mixing bowl, beat the cream with sugar and vanilla until soft peaks form. Fold in the blackberry puree and dissolved gelatin.
  4. Pour the mousse over the crust and smooth the top. Chill for at least 4 hours or overnight until firm.
  5. Mix blackberry jam and lemon juice for the topping. Spread over the set mousse and garnish with fresh blackberries.
