- 1 teaspoon vanilla extract

- 1/2 cup chopped pistachios (plus extra for garnish)
- 1 tablespoon unsalted butter
Instructions
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their color and flavor.
- In a medium saucepan, combine the Arborio rice, whole milk, sugar, black sesame seeds, and salt. Bring to a gentle boil over medium heat, stirring frequently to prevent sticking.
- Once boiling, reduce the heat to low and simmer for about 25-30 minutes, stirring occasionally, until the rice is tender and the mixture has thickened to a creamy consistency.
- Stir in the saffron mixture, vanilla extract, and butter. Cook for an additional 5 minutes, stirring constantly.
- Remove from heat and let the pudding cool slightly. Serve warm or chilled in individual bowls, garnished with chopped pistachios.

- For added richness, substitute half of the whole milk with coconut milk.
