Creamy Black Sesame & Coconut Milk Rice Pudding

- 1 cup jasmine rice
- 2 cups coconut milk
- 2 cups water
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/4 cup black sesame seeds, toasted
- 1 teaspoon vanilla extract
- 1/4 cup shredded coconut, toasted (for garnish)
- Fresh fruit (like mango or berries, for garnish)
Instructions
- Rinse the jasmine rice under cold water until the water runs clear. This removes excess starch and helps achieve a creamy texture.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt. Stir well to combine.
- Bring the mixture to a gentle boil over medium heat, then reduce the heat to low. Cover the saucepan and let it simmer for about 20-25 minutes, stirring occasionally, until the rice is tender and the mixture has thickened.
- Once the rice is cooked, remove the saucepan from heat and stir in the toasted black sesame seeds and vanilla extract.
- Let the pudding cool for about 10 minutes, then transfer it to serving bowls or a large dish. Cover and refrigerate for at least 1 hour to chill and set.
- Before serving, garnish with toasted shredded coconut and fresh fruit if desired.
Notes
- For a richer flavor, substitute half of the coconut milk with heavy cream.
- Add a pinch of cinnamon or nutmeg for a warm spice note, or mix in a tablespoon of maple syrup for added sweetness.
