  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/4 cup black sesame seeds, toasted
  • 1 teaspoon vanilla extract
  • 1/4 cup shredded coconut, toasted (for garnish)
  • Fresh fruit (like mango or berries, for garnish)

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. This removes excess starch and helps achieve a creamy texture.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt. Stir well to combine.
  3. Bring the mixture to a gentle boil over medium heat, then reduce the heat to low. Cover the saucepan and let it simmer for about 20-25 minutes, stirring occasionally, until the rice is tender and the mixture has thickened.
  4. Once the rice is cooked, remove the saucepan from heat and stir in the toasted black sesame seeds and vanilla extract.
  5. Let the pudding cool for about 10 minutes, then transfer it to serving bowls or a large dish. Cover and refrigerate for at least 1 hour to chill and set.
  6. Before serving, garnish with toasted shredded coconut and fresh fruit if desired.

Notes

  • For a richer flavor, substitute half of the coconut milk with heavy cream.
  • Add a pinch of cinnamon or nutmeg for a warm spice note, or mix in a tablespoon of maple syrup for added sweetness.
