Ingredients

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup short fideuá noodles (or thin spaghetti, broken into small pieces)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads
  • 1 can (14 ounces) diced tomatoes, drained
  • 3 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas
  • 1/2 cup cooked squid, cut into rings (optional)
  • 1/2 cup cooked shrimp, peeled and deveined (optional)
  • For the lemon aioli:
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. In a large skillet or paella pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 3-4 minutes.
  2. Stir in the red bell pepper and cook for another 2-3 minutes until tender.
  3. Add the fideuá noodles and smoked paprika, stirring to coat the noodles in the oil and spices. Cook for 2 minutes, allowing the noodles to lightly toast.
  4. Add the saffron, diced tomatoes, vegetable broth, salt, and black pepper. Bring to a boil, then reduce the heat to low and simmer for 10-12 minutes, or until the noodles are cooked and most of the liquid is absorbed.
  5. Stir in the peas and, if using, the squid and shrimp. Cook for an additional 2-3 minutes until heated through.
  6. While the fideuá is cooking, prepare the lemon aioli by mixing together the mayonnaise, lemon juice, lemon zest, garlic, salt, and pepper in a small bowl. Adjust seasoning to taste.
  7. Serve the fideuá hot, drizzled with lemon aioli on top or on the side.

Notes

  • For a spicier kick, add a pinch of cayenne pepper or some chopped jalapeños to the onion mixture.
  • You can substitute the seafood with cooked chicken or keep it vegetarian by adding more vegetables like zucchini or artichokes.
