Description
A flavorful bison rib roast seasoned with garlic and herbs, perfect for a special occasion.
Ingredients
Scale
- 3 to 4 pounds bison rib roast, bone-in
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 cup beef or bison broth
Instructions
- Preheat your oven to 450°F.
- In a small bowl, combine the minced garlic, olive oil, salt, black pepper, rosemary, thyme, onion powder, and smoked paprika to create a garlic paste.
- Rub the garlic paste all over the bison rib roast, ensuring it is evenly coated.
- Place the roast on a rack in a roasting pan. Pour the broth into the bottom of the pan to keep the meat moist during cooking.
- Roast the bison in the preheated oven for 15 minutes to develop a crust.
- Reduce the oven temperature to 325°F and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 130°F for medium-rare.
- Remove the roast from the oven and let it rest for at least 15 minutes before slicing.
- Serve the bison rib roast with the pan drippings drizzled over the top.
Notes
- For a richer flavor, consider adding fresh herbs like thyme or rosemary directly to the roasting pan.
- If you prefer a crustier exterior, increase the initial roasting time to 20 minutes at 450°F before reducing the temperature.
