Description

A flavorful bison rib roast seasoned with garlic and herbs, perfect for a special occasion.

Ingredients

Scale
  • 3 to 4 pounds bison rib roast, bone-in
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 cup beef or bison broth

Instructions

  1. Preheat your oven to 450°F.
  2. In a small bowl, combine the minced garlic, olive oil, salt, black pepper, rosemary, thyme, onion powder, and smoked paprika to create a garlic paste.
  3. Rub the garlic paste all over the bison rib roast, ensuring it is evenly coated.
  4. Place the roast on a rack in a roasting pan. Pour the broth into the bottom of the pan to keep the meat moist during cooking.
  5. Roast the bison in the preheated oven for 15 minutes to develop a crust.
  6. Reduce the oven temperature to 325°F and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 130°F for medium-rare.
  7. Remove the roast from the oven and let it rest for at least 15 minutes before slicing.
  8. Serve the bison rib roast with the pan drippings drizzled over the top.

Notes

  • For a richer flavor, consider adding fresh herbs like thyme or rosemary directly to the roasting pan.
  • If you prefer a crustier exterior, increase the initial roasting time to 20 minutes at 450°F before reducing the temperature.
