Description
Birria Tacos are a delicious Mexican dish made with tender, flavorful meat and served with crispy tortillas.
Ingredients

- 2 lbs beef chuck (or goat), cubed
- 4 dried guajillo chilies, deseeded
- 2 chipotle peppers in adobo
- 1 tsp cumin
- 1 tsp oregano
- 4 cloves garlic
- 2 cups beef broth
- Corn tortillas
- Oaxaca cheese, shredded
- Cilantro, onion, lime (to serve)
Instructions
- Boil chilies in water for 10 minutes.
- Blend the boiled chilies with chipotle, cumin, oregano, garlic, and broth.
- Sear the beef and then add the sauce.
- Slow-cook for 3 hours until the meat is tender.
- Shred the meat.
- Dip tortillas in consommé (strained fat from broth), fill with meat and cheese, and fry until crispy.
- Serve with consommé for dipping.

- Use an instant pot for faster cooking (1 hour on high pressure).
