Description

Birria Tacos are a delicious Mexican dish made with tender, flavorful meat and served with crispy tortillas.


Ingredients

  • 2 lbs beef chuck (or goat), cubed
  • 4 dried guajillo chilies, deseeded
  • 2 chipotle peppers in adobo
  • 1 tsp cumin
  • 1 tsp oregano
  • 4 cloves garlic
  • 2 cups beef broth
  • Corn tortillas
  • Oaxaca cheese, shredded
  • Cilantro, onion, lime (to serve)

Instructions

  1. Boil chilies in water for 10 minutes.
  2. Blend the boiled chilies with chipotle, cumin, oregano, garlic, and broth.
  3. Sear the beef and then add the sauce.
  4. Slow-cook for 3 hours until the meat is tender.
  5. Shred the meat.
  6. Dip tortillas in consommé (strained fat from broth), fill with meat and cheese, and fry until crispy.
  7. Serve with consommé for dipping.

  • Use an instant pot for faster cooking (1 hour on high pressure).
