  • 1 cup shredded lettuce
  • 1/2 cup diced pickles
  • 1/2 cup shredded cheddar cheese
  • 4 large lettuce leaves (for serving)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes. Drain any excess fat if necessary.
  5. In a bowl, mix together the sugar-free ketchup, yellow mustard, mayonnaise, apple cider vinegar, Worcestershire sauce, onion powder, garlic powder, smoked paprika, salt, and pepper.
  6. Pour this mixture over the cooked beef and stir well to combine. Let it simmer for 5-10 minutes, allowing the flavors to meld together.
  7. To serve, place a generous scoop of the sloppy joe mixture onto a large lettuce leaf. Top with shredded lettuce, diced pickles, and shredded cheddar cheese.
