Description

A delicious and keto-friendly twist on the classic Bananas Foster, this bread pudding is rich, creamy, and perfect for dessert.

Ingredients

Scale
  • 3 cups keto-friendly bread, cubed (such as almond flour bread or cloud bread)
  • 1/2 cup unsweetened almond milk
  • 1/2 cup heavy cream
  • 3 large eggs
  • 1/4 cup erythritol or your preferred keto sweetener
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 ripe bananas, sliced
  • 4 tablespoons unsalted butter
  • 1/4 cup chopped pecans (optional)
  • 1/4 cup sugar-free caramel sauce (for drizzling, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a large mixing bowl, whisk together the almond milk, heavy cream, eggs, erythritol, vanilla extract, cinnamon, and salt until well combined.
  3. Add the cubed bread to the mixture, gently folding until all pieces are soaked. Let it sit for about 10 minutes to absorb the liquid.
  4. Fold in the sliced bananas and chopped pecans, if using.
  5. Pour the mixture into the prepared baking dish and dot the top with butter.
  6. Bake for 30-35 minutes, or until the top is golden brown and the center is set.
  7. Remove from the oven and let it cool for a few minutes before drizzling with sugar-free caramel sauce, if desired.

Notes

  • For a richer flavor, try adding a splash of rum extract to the custard mixture.
  • You can also substitute the bananas with berries for a different twist.
  • Serve with pork rinds or celery sticks for a crunchy side option.
