- 1/2 cup unsweetened almond milk
- 1/2 cup heavy cream
- 3 large eggs
- 1/4 cup erythritol or your preferred keto sweetener
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 ripe bananas, sliced
- 4 tablespoons unsalted butter
- 1/4 cup chopped pecans (optional)
- 1/4 cup sugar-free caramel sauce (for drizzling, optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a large mixing bowl, whisk together the almond milk, heavy cream, eggs, erythritol, vanilla extract, cinnamon, and salt until well combined.
- Add the cubed bread to the mixture, gently folding until all pieces are soaked. Let it sit for about 10 minutes to absorb the liquid.
- Fold in the sliced bananas and chopped pecans, if using.
- Pour the mixture into the prepared baking dish and dot the top with butter.
- Bake for 30-35 minutes, or until the top is golden brown and the center is set.
- Remove from the oven and let it cool for a few minutes before drizzling with sugar-free caramel sauce, if desired.
Notes
- For a richer flavor, try adding a splash of rum extract to the custard mixture.
- You can also substitute the bananas with berries for a different twist.
