  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Fresh cilantro, for garnish (optional)

Instructions

  1. In a large skillet or pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
  2. Add the ground beef or turkey to the skillet. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat if necessary.
  3. Stir in the diced tomatoes (with juice), diced green chilies, chili powder, cumin, paprika, salt, and black pepper. Mix well and let it simmer for about 5 minutes.
  4. Add the cauliflower rice to the skillet and stir until well combined. Cover and cook for an additional 10-15 minutes, stirring occasionally, until the cauliflower is tender.
  5. Remove the skillet from heat and sprinkle the shredded cheddar cheese on top. Cover for a few minutes until the cheese melts.
  6. Garnish with fresh cilantro if desired and serve hot.
