A flavorful and easy-to-make one pot Mexican rice casserole that combines ground meat, cauliflower rice, and spices for a delicious dinner.

- 2 cups cauliflower rice (fresh or frozen)
- 1 pound ground beef or turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 can (4 ounces) diced green chilies
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- Fresh cilantro, for garnish (optional)
Instructions
- In a large skillet or pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
- Add the ground beef or turkey to the skillet. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat if necessary.
- Stir in the diced tomatoes (with juice), diced green chilies, chili powder, cumin, paprika, salt, and black pepper. Mix well and let it simmer for about 5 minutes.
- Add the cauliflower rice to the skillet and stir until well combined. Cover and cook for an additional 10-15 minutes, stirring occasionally, until the cauliflower is tender.
- Remove the skillet from heat and sprinkle the shredded cheddar cheese on top. Cover for a few minutes until the cheese melts.
- Garnish with fresh cilantro if desired and serve hot.

- For a crunchier texture, consider topping the casserole with crushed pork rinds before serving.
- You can substitute the ground meat with shredded chicken or a plant-based protein for a different flavor profile.
