- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 8 small flour tortillas
- 1 tablespoon fresh mint leaves, chopped (optional)
Instructions
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
- Preheat your oven to 350°F. Spread the crumb mixture evenly into the bottom of a 9-inch pie dish or a similar baking dish. Bake for 10 minutes, then remove and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- To assemble the tacos, warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
- Spoon a generous amount of the cheesecake filling onto the center of each tortilla. Top with mixed berries and sprinkle with chopped mint, if desired.
- Fold the tortillas in half to create taco shapes and serve immediately.
