Description
Discover the crispy delight of Belarusian Potato Pancakes, a perfect blend of flavors and textures.
Ingredients
Scale
- 4 large russet potatoes, peeled and shredded
- 1 small onion, finely diced
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup vegetable oil (for frying)
- Sour cream (for serving)
- Chopped fresh chives (for garnish, optional)
Instructions
- Grate the potatoes and place them in a fine mesh strainer. Rinse under cold water to remove excess starch, then press down to eliminate as much moisture as possible.
- In a spacious bowl, combine the drained potatoes with the diced onion, eggs, flour, baking powder, salt, and black pepper. Stir until the mixture is uniform.
- In a large skillet, heat the vegetable oil over medium-high heat until shimmering.
- Using a spoon, drop generous portions of the potato mixture into the hot oil, gently pressing them down to form fritters.
- Cook for approximately 4-5 minutes on each side, or until they achieve a golden-brown crust.
- Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.
- Serve them warm, topped with a generous spoonful of sour cream and a sprinkle of fresh chives if desired.
Notes
- For an extra crunch, consider mixing in a tablespoon of cornstarch into the batter.
- Feel free to add grated cheese or crispy bacon bits for a delicious twist!
