Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
- Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
- In a separate bowl, mix the mashed beets, buttermilk, egg, and vanilla extract until smooth.
- Pour the beet mixture into the flour mixture and stir gently until just combined. Do not overmix.
- Turn the dough out onto a floured surface and knead gently a few times until it comes together. Pat the dough into a 1-inch thick rectangle.
- Use a biscuit cutter or a glass to cut out biscuits and place them on the prepared baking sheet. Gather any scraps, re-roll, and cut out additional biscuits.
