- 1 pound fresh green beans, trimmed and cut into 2-inch pieces
- 1 cup sharp cheddar cheese, shredded
- 1 cup cream cheese, softened
- 1 cup beer (lager or pale ale)
- 1 cup French fried onions
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F.
- In a large pot of boiling salted water, blanch the green beans for 3-4 minutes until bright green and slightly tender. Drain and immediately transfer to a bowl of ice water to stop the cooking process. After a few minutes, drain the beans again and set aside.
- In a large mixing bowl, combine the softened cream cheese, beer, garlic powder, onion powder, salt, and black pepper. Whisk until smooth and well combined.
- Stir in the shredded cheddar cheese and blanched green beans until evenly coated.
- Grease a 9×13-inch baking dish with olive oil. Pour the green bean mixture into the dish and spread it out evenly. Top with French fried onions.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the onions are golden brown.
- Let it cool for about 5 minutes before serving.
Notes
- For a spicier kick, add 1/4 teaspoon cayenne pepper to the cheese mixture.
- You can substitute the green beans with broccoli or asparagus for a different flavor profile.
- For a lighter version, use low-fat cream cheese and reduced-fat cheese.
