Description
A delicious recipe for beef-wrapped asparagus bundles that are perfect for a healthy appetizer or main dish.
Ingredients
Scale
- 1 pound asparagus, trimmed
- 8 ounces thinly sliced beef (such as flank steak or sirloin)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon balsamic vinegar
- 1 tablespoon fresh lemon juice
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- In a small bowl, mix together the olive oil, garlic powder, onion powder, salt, black pepper, red pepper flakes, balsamic vinegar, and lemon juice.
- Take a bundle of 3-4 asparagus spears and wrap a slice of beef around the middle of the bundle. Secure with a toothpick if necessary. Repeat with the remaining asparagus and beef.
- Place the beef-wrapped asparagus bundles on the prepared baking sheet. Brush the bundles with the olive oil mixture, ensuring they are well coated.
- Bake in the preheated oven for 15-20 minutes, or until the beef is cooked to your desired doneness and the asparagus is tender.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For added flavor, consider marinating the beef in the olive oil mixture for at least 30 minutes before wrapping the asparagus.
- You can also substitute the asparagus with green beans or zucchini for a different twist.
