Description

Beef Wellington is a classic dish that features a tender beef tenderloin coated with mushrooms and wrapped in flaky puff pastry.


Ingredients

  • 2 pounds beef tenderloin, trimmed
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 8 ounces cremini mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Dijon mustard
  • 8 slices prosciutto
  • 1 sheet puff pastry (about 17.3 ounces), thawed
  • 1 egg, beaten (for egg wash)
  • Fresh thyme leaves, for garnish (optional)

Instructions

  1. Preheat the oven to 400°F.
  2. Season the beef tenderloin generously with salt and pepper.
  3. In a large skillet, heat the olive oil over medium-high heat and sear the beef on all sides until browned, about 2-3 minutes per side.
  4. Remove the beef from the skillet and let it cool, then brush it with Dijon mustard.
  5. In the same skillet, add the chopped mushrooms and garlic, cooking until the mushrooms release their moisture and become golden brown, about 8-10 minutes. Remove from heat and let cool.
  6. Lay out the prosciutto slices on a sheet of plastic wrap, slightly overlapping, and spread the cooled mushroom mixture over the prosciutto.
  7. Place the beef on top and roll it tightly using the plastic wrap. Chill in the refrigerator for 15-20 minutes.
  8. Roll out the puff pastry on a lightly floured surface, unwrap the beef from the plastic wrap, and place it in the center of the pastry.
  9. Fold the pastry over the beef, sealing the edges, and trim any excess pastry. Place seam-side down on a baking sheet and brush the top with the beaten egg.
  10. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the internal temperature of the beef reaches 125°F for medium-rare.
  11. Let rest for 10 minutes before slicing.

Notes

  • For a twist, try adding a layer of pâté or a sprinkle of blue cheese on top of the mushroom mixture before wrapping.
  • If you prefer a spicier kick, mix in some chopped jalapeños with the mushrooms.
