Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 medium potatoes, diced
  • 1 bell pepper, chopped
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups beef broth
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides, about 5-7 minutes. Remove the beef and set aside.
  2. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Return the browned beef to the pot. Add the carrots, potatoes, bell pepper, and green beans. Stir to combine.
  4. Pour in the diced tomatoes with their juice and the beef broth. Add the thyme, paprika, Worcestershire sauce, bay leaf, salt, and pepper. Stir well.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally and add more broth if necessary.
  6. Remove the bay leaf before serving. Adjust seasoning if needed. Serve hot.

Notes

  • For a spicier kick, add a diced jalapeño or a teaspoon of red pepper flakes.
  • You can substitute the beef with chicken or turkey for a lighter version.
