- 2 tablespoons beef tallow
- 1/4 cup all-purpose flour
- 2 cups beef stock
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
- In a medium saucepan, melt the beef tallow over medium heat until fully liquefied.
- Once melted, add the flour to the tallow, whisking continuously for about 2-3 minutes until the mixture is golden brown and forms a roux.
- Gradually pour in the beef stock while whisking to prevent lumps from forming.
- Continue to cook the mixture over medium heat, stirring frequently, until it thickens, about 5-7 minutes.
- Season with salt, black pepper, garlic powder, and onion powder. Stir well to combine.
- Remove from heat and let cool slightly before serving. Garnish with fresh parsley if desired.
Notes
- For a richer flavor, consider adding a splash of red wine or a tablespoon of Worcestershire sauce while cooking the stock.
- To make it a creamy velouté, stir in 1/4 cup of heavy cream just before serving.
