  • 2 cups beef stock
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a medium saucepan, melt the beef tallow over medium heat until fully liquefied.
  2. Once melted, add the flour to the tallow, whisking continuously for about 2-3 minutes until the mixture is golden brown and forms a roux.
  3. Gradually pour in the beef stock while whisking to prevent lumps from forming.
  4. Continue to cook the mixture over medium heat, stirring frequently, until it thickens, about 5-7 minutes.
  5. Season with salt, black pepper, garlic powder, and onion powder. Stir well to combine.
  6. Remove from heat and let cool slightly before serving. Garnish with fresh parsley if desired.

Notes

  • For a richer flavor, consider adding a splash of red wine or a tablespoon of Worcestershire sauce while cooking the stock.
  • To make it a creamy velouté, stir in 1/4 cup of heavy cream just before serving.
