Description
A unique and hearty Beef Pancreas Potage that combines tender beef pancreas with fresh vegetables in a flavorful broth.
Ingredients
Scale
- 2 cups beef pancreas, cleaned and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 medium carrots, diced
- 2 stalks celery, diced
- 4 cups beef broth
- 1 cup potatoes, peeled and diced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the diced carrots and celery to the pot, cooking for an additional 5 minutes until they begin to soften.
- Stir in the diced beef pancreas, cooking for another 5 minutes until lightly browned.
- Add the diced potatoes, beef broth, dried thyme, salt, and black pepper to the pot. Bring the mixture to a boil.
- Reduce the heat to low and let the potage simmer for 30-40 minutes, or until the vegetables are tender and the flavors meld together.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
Notes
- For a creamier texture, blend a portion of the potage with an immersion blender before serving.
- Add a splash of lemon juice or a teaspoon of vinegar just before serving to brighten the flavors.
