  • 1 pound beef lung, cleaned and cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons laksa paste
  • 4 cups beef broth
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 8 ounces rice noodles
  • 2 cups bean sprouts
  • 2 green onions, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  3. Add the laksa paste to the pot and cook for 2-3 minutes, stirring frequently to combine the flavors.
  4. Pour in the beef broth and coconut milk, then add the fish sauce and sugar. Bring the mixture to a simmer.
  5. Add the beef lung pieces to the pot and cook for 20-25 minutes, or until the lung is tender.
  6. Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.
  7. Once the beef lung is tender, stir in the cooked rice noodles and bean sprouts. Cook for an additional 2-3 minutes to heat through.
  8. Serve the laksa in bowls, garnished with sliced green onions, fresh cilantro, and lime wedges on the side.

  • For a spicier version, add sliced red chilies or a dash of chili oil when serving.
