Beef Lung Laksa is a unique and flavorful dish that combines tender beef lung with aromatic spices and creamy coconut milk, served over rice noodles.

- 1 pound beef lung, cleaned and cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons laksa paste
- 4 cups beef broth
- 1 can (14 ounces) coconut milk
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 8 ounces rice noodles
- 2 cups bean sprouts
- 2 green onions, sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Add the laksa paste to the pot and cook for 2-3 minutes, stirring frequently to combine the flavors.
- Pour in the beef broth and coconut milk, then add the fish sauce and sugar. Bring the mixture to a simmer.
- Add the beef lung pieces to the pot and cook for 20-25 minutes, or until the lung is tender.
- Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.
- Once the beef lung is tender, stir in the cooked rice noodles and bean sprouts. Cook for an additional 2-3 minutes to heat through.
- Serve the laksa in bowls, garnished with sliced green onions, fresh cilantro, and lime wedges on the side.
Notes
- For a spicier version, add sliced red chilies or a dash of chili oil when serving.
- Substitute beef lung with chicken or shrimp for a different protein option while keeping the laksa flavor profile.
