- 1 pound beef kidney, cleaned and sliced into thin strips
- 2 tablespoons beef tallow (or substitute with coconut oil)
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced (any color)
- 1 cup snap peas, trimmed
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 2 green onions, chopped (for garnish)
Instructions
- Heat the beef tallow in a large skillet or wok over medium-high heat.
- Add the sliced beef kidney to the skillet and stir-fry for about 3-4 minutes until browned.
- Remove the kidney from the skillet and set aside.
- In the same skillet, add the sliced onion and garlic, cooking for 2-3 minutes until the onion is translucent.
- Add the bell pepper and snap peas, stir-frying for another 3-4 minutes until the vegetables are tender-crisp.
- Return the beef kidney to the skillet, then add the soy sauce, oyster sauce (if using), black pepper, and salt. Stir well to combine and cook for an additional 2 minutes.
- Remove from heat and garnish with chopped green onions before serving.
Notes
- For a milder flavor, soak the kidney slices in milk for 1 hour before cooking to reduce any strong taste.
- You can substitute the beef kidney with chicken liver or beef strips for a different protein option.
