- 2 pounds beef heart, trimmed and cut into 1-inch thick steaks
- 4 tablespoons clarified butter
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
Instructions
- Preheat a large skillet or cast-iron pan over medium-high heat.
- Pat the beef heart steaks dry with paper towels to remove excess moisture.
- In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, rosemary, and thyme.
- Rub the spice mixture evenly over both sides of each steak.
- Add the clarified butter to the hot skillet, allowing it to melt and coat the bottom of the pan.
- Carefully place the seasoned steaks in the skillet, making sure not to overcrowd the pan. You may need to cook in batches.
- Sear the steaks for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.
- Remove the steaks from the skillet and let them rest for 5 minutes before slicing.
- Serve warm, garnished with additional fresh herbs if desired.

- For added flavor, marinate the beef heart steaks in a mixture of olive oil, balsamic vinegar, and herbs for a few hours before cooking.
- Serve the steaks with a side of sautéed vegetables or a fresh salad for a complete meal.
