  • 4 tablespoons clarified butter

  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Instructions

  1. Preheat a large skillet or cast-iron pan over medium-high heat.
  2. Pat the beef heart steaks dry with paper towels to remove excess moisture.
  3. In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, rosemary, and thyme.
  4. Rub the spice mixture evenly over both sides of each steak.
  5. Add the clarified butter to the hot skillet, allowing it to melt and coat the bottom of the pan.
  6. Carefully place the seasoned steaks in the skillet, making sure not to overcrowd the pan. You may need to cook in batches.
  7. Sear the steaks for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.
  8. Remove the steaks from the skillet and let them rest for 5 minutes before slicing.
  9. Serve warm, garnished with additional fresh herbs if desired.
