  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  2. Add the beef heart pieces to the pot and cook until browned on all sides, about 8-10 minutes.
  3. Stir in the cumin, oregano, chili powder, salt, and pepper, mixing well to coat the meat with the spices.
  4. Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beef heart is tender.
  5. Add the hominy to the pot and simmer for an additional 20 minutes. Adjust seasoning if necessary.
  6. Serve the pozole hot, topped with shredded cabbage, sliced radishes, and fresh cilantro. Offer lime wedges on the side for squeezing over the soup.
