- 2 pounds beef cheeks, trimmed and cut into large pieces
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 cups bone broth
- 1 cup unsalted butter, cut into pieces
- 2 sprigs fresh thyme
- 2 bay leaves
Instructions
- Preheat your oven to 300°F (150°C).
- In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef cheeks with salt and black pepper, then add them to the pot. Sear the beef cheeks for about 4-5 minutes on each side until browned. Remove the beef and set aside.
- In the same pot, add the diced onion and sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
- Pour in the bone broth, scraping up any browned bits from the bottom of the pot. Return the beef cheeks to the pot, then add the butter, thyme, and bay leaves.
- Bring the mixture to a simmer, then cover the pot with a lid and transfer it to the preheated oven. Braise for 3 to 4 hours, or until the beef cheeks are tender and easily shredded with a fork.
- Once done, remove the pot from the oven and let it rest for 10 minutes. Discard the thyme and bay leaves before serving.
Notes
- For added depth of flavor, consider adding a splash of red wine to the braising liquid before placing it in the oven.
- Serve the braised beef cheeks over creamy mashed potatoes or polenta for a hearty meal.
