Ingredients

  • 1 can (20 oz) young green jackfruit in water or brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup BBQ sauce (your favorite brand)
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 slider buns
  • 2 cups green cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 large avocado, mashed
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add minced garlic and cook for an additional minute until fragrant.
  2. Add the drained jackfruit to the skillet, breaking it apart with a fork or spoon. Stir in the smoked paprika, cumin, salt, and pepper. Cook for about 5-7 minutes, allowing the jackfruit to absorb the flavors.
  3. Pour in the BBQ sauce and stir to combine. Reduce heat to low and simmer for about 10 minutes, stirring occasionally.
  4. While the jackfruit is cooking, prepare the avocado slaw. In a large bowl, combine the shredded green and red cabbage. In a separate bowl, mix the mashed avocado, lime juice, salt, and pepper until smooth. Fold the avocado mixture into the cabbage until well combined.
  5. To assemble the sliders, spoon a generous amount of the BBQ jackfruit onto each slider bun and top with a scoop of avocado slaw. Serve immediately.
