  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1 tablespoon matcha powder
  • 1 tablespoon hot water
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a 9-inch springform pan with parchment paper, ensuring the paper extends above the edges of the pan.
  2. In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy, about 2-3 minutes.
  3. Add the heavy cream, eggs, and vanilla extract to the cream cheese mixture. Mix until fully combined.
  4. Sift in the flour and salt, then mix until just incorporated. Do not overmix.
  5. In a small bowl, combine the matcha powder and hot water to create a smooth paste. Take about 1 cup of the cheesecake batter and mix it with the matcha paste until well combined.
  6. Pour half of the plain cheesecake batter into the prepared springform pan. Spoon the matcha batter over the plain batter, then pour the remaining plain batter on top. Use a knife or skewer to gently swirl the matcha into the cheesecake for a marbled effect.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is deeply browned and the center is slightly jiggly. Remove from the oven and let cool to room temperature.
  8. Once cooled, refrigerate the cheesecake for at least 4 hours or overnight before serving to allow it to set properly.
