- 2 ripe bananas, mashed
- 1 cup grated zucchini
- 1/3 cup melted butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup sugar
- 1 large egg, beaten
- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the mashed bananas and grated zucchini.
- Add the melted butter and vanilla extract to the banana-zucchini mixture and mix well.
- In another bowl, whisk together the baking soda, salt, cinnamon, and sugar.
- Beat in the egg to the banana-zucchini mixture.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

- For added flavor, consider adding nuts or chocolate chips to the batter.
