Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the mashed bananas and grated zucchini.
  3. Add the melted butter and vanilla extract to the banana-zucchini mixture and mix well.
  4. In another bowl, whisk together the baking soda, salt, cinnamon, and sugar.
  5. Beat in the egg to the banana-zucchini mixture.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
