A creative twist on classic rice krispie treats, infused with the delightful flavor of banana pudding.

- 2 cups unsweetened puffed rice cereal
- 1 cup almond flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup unsweetened peanut butter
- 1/2 cup sugar-free vanilla pudding mix
- 1/4 cup unsweetened almond milk
- 1/4 cup butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 cup sliced almonds (for topping)
Instructions
- In a large saucepan, melt the butter and peanut butter over low heat until smooth. Stir in the almond milk and vanilla extract until well combined.
- Add the sugar-free vanilla pudding mix and salt to the mixture, stirring until fully incorporated and smooth.
- Remove the saucepan from heat and gently fold in the unsweetened puffed rice cereal, almond flour, and shredded coconut until evenly coated.
- Press the mixture firmly into a greased 9×9 inch baking dish, spreading it evenly across the bottom.
- Sprinkle the sliced almonds on top and press them gently into the mixture.
- Allow the treats to cool at room temperature for about 30 minutes, or until set. For quicker setting, refrigerate for 15 minutes.
- Once set, cut into squares and serve.
Notes
- For a chocolate twist, add 1/4 cup of unsweetened cocoa powder to the mixture.
- You can substitute the almond flour with coconut flour for a different flavor profile.
- Serve with pork rinds or celery sticks for a crunchy side option.
