- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/2 cup peanut butter (or almond butter)
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the mashed bananas, peanut butter, honey (or maple syrup), and vanilla extract. Mix until well combined.
- Add the rolled oats, baking soda, and salt to the banana mixture. Stir until all ingredients are evenly incorporated.
- If using, fold in the chocolate chips and chopped nuts.
- Drop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
