  • 1/2 cup chocolate chips (optional)
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the mashed bananas, peanut butter, honey (or maple syrup), and vanilla extract. Mix until well combined.
  3. Add the rolled oats, baking soda, and salt to the banana mixture. Stir until all ingredients are evenly incorporated.
  4. If using, fold in the chocolate chips and chopped nuts.
  5. Drop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
