  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the olive oil, balsamic vinegar, garlic powder, dried thyme, salt, and pepper. Whisk until well combined.
  3. Add the cubed purple potatoes to the bowl and toss until they are evenly coated with the balsamic mixture.
  4. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, or until the potatoes are tender and golden brown, stirring halfway through for even cooking.
