- 2 pounds purple potatoes, washed and cut into 1-inch cubes
- 3 tablespoons olive oil
- 1/4 cup balsamic vinegar
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the olive oil, balsamic vinegar, garlic powder, dried thyme, salt, and pepper. Whisk until well combined.
- Add the cubed purple potatoes to the bowl and toss until they are evenly coated with the balsamic mixture.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the potatoes are tender and golden brown, stirring halfway through for even cooking.
- Once done, remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
Notes
- For a spicy kick, add a pinch of red pepper flakes to the balsamic mixture.
- Try substituting the purple potatoes with sweet potatoes for a different flavor and color.
