Description
A delicious and flavorful Balsamic Fig Pork Tenderloin recipe that is perfect for any occasion.
Ingredients
Scale
- 2 pork tenderloins (approximately 1 pound each)
- 1 cup balsamic vinegar
- 1 cup fresh figs, diced (or 1/2 cup dried figs, diced)
- 1/4 cup honey
- 2 tablespoons olive oil
- 4 cloves garlic, finely chopped
- 1 teaspoon fresh rosemary, minced (or 1/2 teaspoon dried)
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- Preheat your oven to 400°F.
- In a saucepan, mix together the balsamic vinegar, diced figs, honey, chopped garlic, minced rosemary, sea salt, and black pepper.
- Heat the mixture over medium flame, stirring occasionally until it begins to bubble gently. Cook for about 10 minutes until it reduces and thickens slightly, then take it off the heat and set aside.
- In a large skillet that can go in the oven, warm the olive oil over medium-high heat.
- Season the pork tenderloins with sea salt and black pepper, then add them to the hot skillet.
- Sear each side for about 3-4 minutes until they develop a golden-brown crust.
- Drizzle the balsamic fig sauce over the pork, ensuring each piece is generously coated.
- Place the skillet in the preheated oven and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F.
- After removing the skillet from the oven, let the pork rest for 5-10 minutes before slicing.
- Serve the tenderloin with the luscious fig sauce poured over the top.
Notes
- For added sweetness, consider incorporating an extra tablespoon of honey into the sauce.
- Pair this dish with roasted vegetables or a crisp salad for a well-rounded meal.
