- 2 large boneless, skinless chicken breasts
- 4 ounces Brie cheese, cut into small pieces
- 1/2 cup dried figs, chopped
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix the chopped figs with balsamic vinegar and let them soak for about 10 minutes.
- While the figs are soaking, prepare the chicken breasts by slicing a pocket into each breast, being careful not to cut all the way through.
- Stuff each chicken breast with pieces of Brie cheese and the soaked figs, dividing the mixture evenly between the two breasts.
- Season the outside of the chicken with olive oil, garlic powder, dried thyme, salt, and pepper.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let rest for 5 minutes before slicing. Garnish with fresh parsley before serving.
Notes
- For added flavor, consider marinating the chicken in balsamic vinegar for an hour before stuffing.
- Substitute goat cheese for Brie for a tangy twist, or add spinach for extra nutrition and flavor.
