Ingredients

  • 2 large boneless, skinless chicken breasts
  • 4 ounces Brie cheese, cut into small pieces
  • 1/2 cup dried figs, chopped
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix the chopped figs with balsamic vinegar and let them soak for about 10 minutes.
  3. While the figs are soaking, prepare the chicken breasts by slicing a pocket into each breast, being careful not to cut all the way through.
  4. Stuff each chicken breast with pieces of Brie cheese and the soaked figs, dividing the mixture evenly between the two breasts.
  5. Season the outside of the chicken with olive oil, garlic powder, dried thyme, salt, and pepper.
  6. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. Remove from the oven and let rest for 5 minutes before slicing. Garnish with fresh parsley before serving.

  • For added flavor, consider marinating the chicken in balsamic vinegar for an hour before stuffing.
