- 1/4 cup extra virgin olive oil
- 1/4 cup fresh lemon juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- In a medium saucepan, combine the drained chickpeas, olive oil, lemon juice, minced garlic, ground cumin, smoked paprika, salt, and pepper.
- Heat the mixture over medium heat, stirring occasionally, until warmed through, about 5-7 minutes.
- Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice as desired.
- Remove from heat and stir in the chopped parsley and red pepper flakes if using.
- Serve warm, drizzling any remaining oil from the pan over the top.
Notes
- For added texture, consider topping with toasted pine nuts or slivered almonds before serving.
- If you prefer a spicier dish, add a pinch of cayenne pepper or serve with a side of harissa sauce for dipping.
