- 1 pound fresh salmon fillet, skin removed
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 large egg
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika
- 1 tablespoon olive oil (for drizzling)
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- In a food processor, add the salmon fillet and pulse until finely chopped but not pureed. Transfer to a large mixing bowl.
- Add breadcrumbs, Parmesan cheese, parsley, onion, garlic, egg, Dijon mustard, lemon juice, salt, black pepper, and smoked paprika to the bowl with the salmon. Mix until well combined.
- Using your hands, form the mixture into meatballs, about 1.5 inches in diameter. Place the meatballs on the prepared baking sheet, spacing them about an inch apart.
- Drizzle the meatballs with olive oil to help them brown. Bake in the preheated oven for 15-20 minutes, or until the meatballs are cooked through and lightly golden.
- Let the meatballs cool for a few minutes before serving. They can be served with a dipping sauce or over a bed of greens.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the mixture.
- Substitute half of the salmon with canned salmon for a quicker option, ensuring to drain it well before mixing.
