Ingredients

  • 1 pound fresh salmon fillet, skin removed
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 1 tablespoon olive oil (for drizzling)

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a food processor, add the salmon fillet and pulse until finely chopped but not pureed. Transfer to a large mixing bowl.
  3. Add breadcrumbs, Parmesan cheese, parsley, onion, garlic, egg, Dijon mustard, lemon juice, salt, black pepper, and smoked paprika to the bowl with the salmon. Mix until well combined.
  4. Using your hands, form the mixture into meatballs, about 1.5 inches in diameter. Place the meatballs on the prepared baking sheet, spacing them about an inch apart.
  5. Drizzle the meatballs with olive oil to help them brown. Bake in the preheated oven for 15-20 minutes, or until the meatballs are cooked through and lightly golden.
  6. Let the meatballs cool for a few minutes before serving. They can be served with a dipping sauce or over a bed of greens.
